I LOVE to travel. So much. There were so many ideas that raced through my head when I saw this theme that I wasn’t sure what to pick! I’ve had so many amazing meals on my trips, but I decided to take it back to the beginning. Something that no matter what screams vacation. Who doesn’t like a reminder of vacation? I sure do! For me that ingredient is macadamia nuts.

I don’t know how you feel about them, but there is just something about macadamia nuts that scream all things vacation, beach, Hawaii (even though they are technically native to Australia haha). Do you feel the same way?

The first trips my parents took without us kids was to the Hawaiian Islands. They did this for a few years. Yes, yes. How could they leave me behind?! I know you’re wondering the same thing.

But, honestly, at that age I was super pumped to get to spend time at grandma’s house so I was for sure ok with it. I loved going to grandma’s house and for sure wish she was still around. (When I was older, though, my parents were kind enough to take us with them. Thanks! Love you!!)

Anyway, back then, they always brought back the requisite lei/beaded necklace, but there were also always macadamia nuts, too. To me they were so exotic. I had never seen, nor heard of them before. They would bring back cans of them, and chocolate covered ones, which (like most [now dark] chocolate covered things, are SO good).

Back then, you couldn’t find them in your local grocery store either, so they were this rare treat that we got every couple years, or so. Over the years, I have developed a mad fondness for them. White chocolate macadamia nut cookies? I’m totally in. I decided to up the anti this time around and make them chocolate based because, well, I love chocolate.

These babies though are healthy enough to eat for breakfast! Macadamia nuts pack plenty of healthy fats on their own. Combine them with the power of protein powder and oatmeal? You get a well rounded treat that has healthy fats, protein and fiber. No added sugars, oils or butter needed. Let’s get baking. Ingredients
Servings: cookies
Instructions
  1. Preheat your oven to 350 degrees and grease a cookie sheet
  2. Grind your oats into flour, and crush your macadamia nuts
  3. Place all ingredients into a bowl and slowly add your liquid while stirring until you get a thicker pancake-like batter consistency
  4. Drop the batter onto your pre-greased cookie sheet until all of the batter is used (use a spatula to get out all of the batter from the bowl)
  5. Cook for about 7-10 minutes in the oven and then cool on a cookie sheet. Eat and enjoy.
Recipe Notes

1. I use water as my liquid of choice, feel free to use whatever you would like

2. The amount of liquid will be dependent on how absorbent your protein powder is. (The batter will be thinner than your average cookie dough)

3. The amount of cookies you make will be dependent on the size. I prefer lots of cookies as opposed to a few, so I make small, silver dollar sized cookies.

4. No worries if you eat all the cookies in one sitting! Each batch is healthy enough to do so πŸ™‚

  1. Haha I totally feel the same way as you about macadamia nuts. The first time I really saw them was in fact in Hawaii (a few years ago when I went). I’m glad your parents finally took you with them πŸ˜‰ It is such a magical place and I am totally loving this tribute to it. Sounds super tasty.

    1. Glad to see it’s not just me. I always think of Hawaii too! Guess this means I’ll just have to go to Australia lol. They are so yummy! I always add extra protein for a satiety boost and to make it a more nutritionally rounded snack/dessert (ahem or breakfast in my case haha)

  3. I agree macadamia nuts are pretty decadent. These cookies seem pretty healthy, without any flour and no sugar other than the chocolate chips. I love when a certain food brings back fond memories. There’s not too many foods that remind me of vacation. Probably more so tropical drinks like Island Punch or Pina Coladas – not something I would drink anywhere else.

    1. Haha really?! I totally agree with you on the drink part though, certain drinks you just can’t help but to think of vacation haha. I often associate food though with various trips…but then again food is pretty much my one track mind so maybe that has something to do with it lol
