In honor of the upcoming Cinco De Mayo, I decided to share with you a recipe that has a bit of Mexican flare to it. This burrito bowl is quick to make (especially if you already have brown rice prepared) and light to eat. It has healthy carbs, fats and proteins for a well-balanced meal.
