Broccoli chicken and cheese frittata and a dash of cinnamon

Today we have a 7 ingredient egg frittata that I’ve cooked up just for you! It’s low carb and high in protein. It’s great hot, or even cold. It’s perfect especially if you have leftover chicken from a meal you made previously. Leave out the chicken to make it vegetarian. Make a larger casserole to have leftovers that are easily taken as a lunch or eaten throughout the week as breakfast! Therefore, it works well as a weekend morning brunch recipe, or as a meal prep meal for the week.

There has been a lot going on lately in my world, both good and bad. Here are a few.

Good: I’m no longer traveling back and forth multiple times a week for rotation (almost 2 hours one way)! WHOOOTTT. It’s a pretty straight shot which is nice, and I get to use my cruise most of the way (and we all know how I feel about cruise control haha), but that’s still a lot of driving that I’m happy to not have to do as much.

Bad: I’ve been on call every day since June 28th and don’t get done until Labor Day weekend. Ugh! I was pretty much on call whenever I went back and that was brutal remember? Home call isn’t all that it can be cracked up to be since most of my call nights there were up-most-of-the-night still had to put in full day of work the next day type of call days and it was all like:

Good: Call here has been VERY reasonable, and have only had to take a few after hour calls so far and none when I’ve been asleep so far. Fingers crossed that stays true. Most have been during the day when I’m in office anyway and they just bring them up from the ED to get examined which is convenient. Not that I’ve been sleeping all that better (probably because life is just mostly overwhelming lately and I don’t have much time to unwind and do things I actually want to be doing, sigh) but I’ve gotten a few (sort of) solid nights which is pretty exciting (Ok for most people these good nights would  probably be a horrendous night but oh well). I need even these sort of solid nights it to happen EVERY night (major plus if they actually became solid nights of sleep). Mainly, because, well, honestly, I’m just so tired. Story of my life.

Good: Another positive, my upper year and I work really well together as a team. It’s also been awesome having someone who I’m comfortable with asking questions. So, I’m learning a lot, too.

Bad: Not so great? When your upper year leaves on vacation and you now have to take on all of their responsibilities. Most of which, you have NO IDEA how to do because while you were doing your responsibilities, your upper level was doing separate tasks. Let’s just say awkward when you walk into surgery realizing that you have NO IDEA how to drape your patient and have to ask your attending to help you haha. He just sort of looked at me and it was all like:

Bad: It’s been POURING like crazy here. FOR DAYS. My phone’s been going off with all sorts of emergency flash flood warnings and I ended up having to wade across a small river trying to get into my office. Totally not fun, by the way, when you’ve got a rain jacket on, and an umbrella and are totally soaked anyway. Even worse? When your shoes and socks are soaked. ALL DAY. Gross. I bet I smelled funny all day haha, but my feet were wrinkly, cold and still wet when I finally got back to my “room” I’ve been put up in. TMI? Sorry hehe. Each day it was all like:

Ingredients
Servings: pieces
Instructions
  1. Preheat your oven to 350 degrees and grease an 8x8 casserole dish
  2. Cook your chicken breast if you don't have leftover chicken to use*
  3. Mix all ingredients in a bowl
  4. Pour into greased dish and place in the oven for ~30-35 minutes
  5. Slice into 4 pieces and serve. Save any leftovers in the refrigerator
Recipe Notes
  1. If you don't have leftover shredded chicken, then feel free to cook your chicken breast anyway you prefer. An easy way is to boil the chicken in a pot of water for ~20 minutes and shred it with a fork. Alternatively, there are microwave and oven options. Ask if you need more specific instructions!
  2. I use water as my liquid of choice. Feel free to use milk or a milk alternative
  3. Feel free to change the amounts of the bulky ingredients
  4. I prefer to try and make the broccoli stick out a bit and not be fully within the frittata base because then the tips get all nice and roasted!

  1. Love frittatas and I would have all of these ingredients on hand! Winner! The weather I’m sad to say has been in the upper 90’s (I’m in South Florida) Fall can not come fast enough for me…I’m melting…

    1. Major win! I hope you love it :). Ah, lately it has been quite hot here too since it has stopped raining (and super humid) but I love the heat. I’m pretty sure I’m a reptile actually… haha. I’m interested to see what fall brings and what fall weather is like here since the move brought me to a very different part of the country

    1. Yay! Glad you liked it. I love how easy they are too. Fancier than the super quick egg scrambles I like to make (and prettier too haha), but MUCH EASIER and quicker (and usually healthier) than a quiche is since you don’t have to go about making a crust

    1. Hahhaha like waders? Oh man that would be hilarious. I don’t know about that, but investing in a good pair of rainboots? I think you are FOR SURE on to something. The ones I had for years cracked earlier this year and I haven’t gotten around to replacing them yet. I need to look into that soon. I hope you love the frittata!       I’m pumped I don’t have to go back and forth so much and even better because here is so much nicer than there.

      Yeah, I’m new to this whole random flash flood thing so well see haha. It was nutty though that all of a sudden I had to wade through a tiny river to get to clinic. As of right now it’s not raining! Yay! Hoping it stays. As for the call..actually I’m totally ok with it since it’s been so reasonable. The only downside is that I have to be here all the time and can’t go back on the weekends. However, once I’m done here…I go back to super brutal call. SO…if I had to choose I’ll stick with this one!
